Working in a 'found space'

I'm seeking the wisdom of you out there of the WWW...

have you done a performance in a found space? I'd like to hear from you if you have!

We're pitching a show idea to a cafe, which will actually involve taking over the venue for the duration of the show. I've not done this before, and am not sure how to approach things like:

*Ticketing (pre-selling online or just at the door)

*Managing customers - getting people in and out (managing those who've paid and those who're just hanging out and don't know there's a show)

*Selling benefits to the venue - doing deals on coffees or free return vouchers etc.
